For millennia, people around the globe have prized butter for its health benefits.

So how did butter become a villain in the quest for good health?



At the turn of our century, heart disease in America was rare. By 1960, it was our number one killer. Yet during the same time period, butter consumption had decreased - from eighteen pounds per person per year, to four.4



And why would I be so insistent that you eat butter? Take a look at the long list of the benefits you receive when you include it in your diet:

Butter is rich in the most easily absorbable form of Vitamin A necessary for thyroid and adrenal health.

Contains lauric acid, important in treating fungal infections and candida.

Contains lecithin, essential for cholesterol metabolism.

Contains anti-oxidants that protect against free radical damage.

Has anti-oxidants that protect against weakening arteries.

Is a great source of Vitamins E and K.

Is a very rich source of the vital mineral selenium.

Saturated fats in butter have strong anti-tumor and anti-cancer properties.

Butter contains conjugated linoleic acid, which is a potent anti-cancer agent, muscle builder, and immunity booster

Vitamin D found in butter is essential to absorption of calcium.

Protects against tooth decay.

Is your only source of an anti-stiffness factor, which protects against calcification of the joints.

Anti-stiffness factor in butter also prevents hardening of the arteries, cataracts, and calcification of the pineal gland.

Is a source of Activator X, which helps your body absorb minerals.

Is a source of iodine in highly absorbable form.

May promote fertility in women.9
Is a source of quick energy, and is not stored in our bodies adipose tissue.

Cholesterol found in butterfat is essential to children's brain and nervous system development.

Contains Arachidonic Acid (AA) which plays a role in brain function and is a vital component of cell membranes.

Protects against gastrointestinal infections in the very young or the elderly.

Thank you Sue.

My family did not use butter when I grew up, but I have learned to like a bit on my bread when I came to Canada, especially the French part, where a lot of butter is used in all types of cooking.

I also have friends from India that use a lot of butter called Ghee, which is a special process, in their cooking, and they seem to be very healthy and doing well.

The nutritional facts of butter that you have listed are very interesting.

Dear Sue, thank you from my heart for this wonderful contribution.
My Grandmother made butter on her own with the cream over the fresh milk we bought. I remember the incredible flavor of that butter, almost impossible to find nowadays. But German and Swiss butter are still very good.
I have always eaten butter, but here in Italy I have often been criticized for eating butter, because here they think olive oil is much healthier.
I had reduced my breakfast butterbread to twice a week (usually SAturday and Sunday when I had more time to prepare the breakfast).
No doubt I love it and I think my body knows that it is good for it.
Lately I almost felt guilty because of eating butter. Being overweight, everybody thought (and said) that I should not eat any.
Reading the list of benefits makes me just so happy. Thank you for this gift, dear Sue!
Top pleasure for me is toast bread with butter and honey ........ mmmmmmmmmmmmmmmmmmmmmmmm!

We did not grow up with butter, but I have started to use some on my bread, once in a while, and it is really good. Like yoko, I have Indian friends who eat a lot of butter and they are very slim and healthy. My European friends eat butter as well, so I am happy to read this information about the benefits of butter.

Eat Butter.

Scientists labeled fat the enemy. Why they were wrong is in this issue. I recommend that you read it. It is several pages and I cannot print it all on Givnology.

Here are a few facts only:

Since 1970 we have gotten fewer calories from these foods:

Whole milk down 78%
Refined white sugar down 35%
Beef down 29%
Eggs down 21%
Butter down 8%
Vegetables down 3%

But we are getting a whole lot more calories from these:

High-fructose corn syrup, up 8,853%
Corn products up 198%
Skim milk up 129%
Chicken up 112%
Turkey up 102%
Added fats and oils (polyunsaturated fats and corn oil)
up 67%


Conclusion: How we eat-whether we cook it ourselves or grab fast-food takeout-matters as much as what we eat. So don't feel bad about the cream in your coffee or the yolks in your eggs or the occasional steak with bernaise sauce if you got the culinary chops-but don't think that the end of the war means all the Extra Value Meals you can eat. As Katz puts it,"the cold hard truth is that the only way to eat is to eat well." Which, I'm thankful to note, doesn't have to include skim milk.

Enjoyed this message again. I still continue to enjoy butter, mostly on Sundays anyway, but now there is my cat Zelda who pretends a little bit to leach off my finger ... the one thing that really impresses me, that she has a very particular way of miaowing when she wants it. Obviously it's good for her too. Smile

I am glad that studies prove that butter has so many positive qualities!
